Preheat the broiler. Coat a baking sheet or a pizza pan with non-stick vegetable cooking spray. Slice the polenta into eight 1/2" thick rounds and arrange them on the pan. Coat the polenta lightly with the spray. Top each round with about 1 teaspoon of the Parmesan.

Place the polenta under the broiler for about 3 to 4 minutes, or until the Parmesan melts and starts to brown lightly.
This dish is special because...
Precooked polenta is wonderful to have on hand, both for instant hors d'oeuvres and for easy entrées. It is available seasoned and unseasoned. And it does not need to be refrigerated until it is opened. This recipe calls for half ofa 24-ounce package.
