Warm the canola oil in a wok or large nonstick skillet over medium-high heat. Add the ginger and garlic. Cook over medium heat for about 1 minute, or until they start to sizzle. Continue to cook, stirring constantly, for 1 minute. Add the soy sauce, sesame oil and the rice wine, sherry or apple juice. Mix well.
