Steps
Step 1
Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 3 minutes. Stir in garlic, bell pepper, and jalapeno (if using), and cook for 2-3 minutes more.
Step 2
Mash half of the black beans with a fork and add to the skillet. Season with chili powder, cumin, and smoked paprika. Stir and cook for 1 minute.
Step 3
Add the remaining black beans and season with salt and pepper. Stir to combine and cook for an additional minute.
Step 4
Push the bean mixture to the sides of the pan and crack the eggs into the center. Cook until the whites are set and the yolks are runny or cooked to your desired doneness.
Step 5
Stir the eggs into the bean mixture and cook for another minute or two until heated through.
Step 6
Remove from heat and stir in cilantro.
Step 7
Serve immediately with a dollop of avocado salsa made by combining mashed avocado, diced tomato, lime juice, and salt.
