Instant Cream of Tomato Soup
Ingredients
1 can pasta sauce
1 cup chicken stock
6 ounces tofu
Steps
Step 1
Combine the pasta sauce, stock and tofu in a blender or food processor and blend until creamy.
Step 2
Pour the mixture into a medium saucepan and warm over medium heat. (Or pour into a medium bowl and microwave on high power until warmed through.) Serve garnished with the basil (if using).
What makes this dish special?
This recipe is from my friend Leni Reed, who publishes the newsletter Supermarket Savvy. When I told her that I was working on a book for people who don't have time to cook, she said I should try this recipe. I made it immediately and found it so tasty that I have made it many times since.
